The date cultivars with highest peroxidise activity accompanied with enhancementof the intensity of the browning which was essential character in tamer.Cationic peroxidase I from Barni was purified using ammonium sulphate, ionexchange chromatography and gel filtration. Molecular weight of peroxidase I was 64 kDa. o-Phenylenediaminewas the best substrate for the enzyme compared to other substrates. The Km values of peroxidase I for H2O2, o-phenylenediamine, guaiacol and o-dianisidine were 2.17, 5, 5.55 and 20 mM/ml, respectively. Peroxidase I was found to have temperature optimum at 40˚C and the enzyme activity was remained stable up to 40˚C. | Keywords : | | - browning
